With Cinco De Mayo coming up in a few days, I thought I would share a dessert recipe I came up with after having something very similar in a Mexican restaurant. This sundae has cajeta on it; if you are not familiar with this delicious spread, you should be! It is a caramel like sauce made from goats milk. I like it because it is not as sweet as caramel and has a subtler taste, so it doesn't take over the sundae.
Coconut Cajeta Sundae
2 cups vanilla ice cream
1/2 cup whipped cream
1/2 cup shredded coconut, toasted
2 teaspoons chopped pecans
2 tablespoons cajeta
Put 1 cup of the ice cream in a bowl. Top with half of all the remaining ingredients. Do the same in a second bowl.
Makes 2 servings
