It has been a crazy weekend that started out with one of my amazing sister’s birthdays. Happy Birthday Kari! She is the third child in our family and she turned 29 on Friday, April 12th. My mom and I were blessed to be able to spend the afternoon of her birthday with her and I couldn’t show up empty handed and since I am short on money (and because I love cake decorating) I decided to make her some cupcakes.
Kari loves softball. (I love it too. Which has a lot to do with her.) Also, we were going to go see the movie “42″ about Jackie Robinson, so what would be better than delicious cupcakes that look like softballs! Not only that, but I made them personalized with all of our softball numbers. The only problem is that we have the same number, so I put my all-star number on mine. All I did was tint the frosting all the different colors then for the green I used a large round tip and for the laces and numbers I used a small round tip. I think they turned out great and she loved them!
This is my mom’s frosting recipe and growing up it was (and still is) all of my sibling’s and my favorite frosting in the world. We sometimes eat it by the spoonful it is so good. Plus because it is made with shortening, you don’t have to worry about refrigerating it.
Mom’s Frosting
1 1/4 cup shortening (Crisco is the best)
3 teaspoons vanilla
1/4 cup water minus 2 teaspoons
1 pound powdered sugar
In a mixer with the whisk attachment, blend the shortening and vanilla. Scrape the sides then alternate adding small amounts of water and powdered sugar, mixing each time, until all blended. Taste it after and add more powdered sugar if needed.
