With temperatures rising, I was in the mood for some delicious lemonade and I found Simply Lemonade with Mango on sale! That delectable drink gave me the idea of making a lemon bar with mango.
On a side note, this past weekend was so much fun! My aunt Anne and Uncle Mark came to town as did all of my siblings and their families. We had two baby's blessed on Sunday and it was the perfect excuse to get together.

Lemon Mango Bars
1/2 mango, pureed
1 lemon
3/4 cup sugar
2 eggs
1 tablespoon powdered sugar
1/2 cup cold butter
1 cup flour
1 teaspoon salt
1/2 mango, pureed

Preheat the oven to 350 degrees farenheit.
Cut the butter into cubes and put in a medium bowl. Add the powdered sugar, flour, and salt and cut with a pastry cutter or fork. When you can pinch the mixture together and it stays together it is done. Spread the crust into the bottom of an 8x8 pan and press down firmly. Bake for 20-25 minutes.
While the crust is in the oven, make the custard. Peel the mango with a vegetable peeler. Cut it around the pit and puree it in the blender. Put through a fine mesh strainer to get rid of the pulp. Set aside. Zest and Juice the lemon. Mix together half the mango puree, lemon juice and zest, sugar, and eggs. When the crust is cooked and cooled a little, spread the custard mixture on top of the crust and bake 30-35 minutes. Sprinkle powdered sugar on top.
