Aebelskivers and Nutella; two of my favorite foods in this whole world and a few days ago, I put them together. For those of you who don't know, Aebelskivers are like little pancake balls made in a special pan. My mom makes these for special occasions and we usually eat them as a breakfast. I was always the shaker; meaning that I would fill the bottom of a brown paper bag with cinnamon sugar and then put the warm Aebelskivers in and shake them until they were coated in the sugary goodness. I few days ago was my first time actually cooking them myself. It took me a few tries to get the technique down (there were a couple very mangled Aebelskivers), but once I did they were TONS of fun to make!
While I love the original Aebelskivers coated in cinnamon sugar, I thought I would try something new so I made nutella stuffed Aebelskivers and I topped them with powdered sugar so they were more of a dessert. They were so amazing! (I mean who doesn't love nutella, right?)
Nutella Stuffed Aebelskivers
2 eggs, seperated
2 cups flour
2 teaspoons baking powder
1 tablespoon white sugar
1/2 teaspoon baking soda
1/2 teaspoon salt
4 tablespoons butter, melted
2 cups milk
1/2 cup nutella
About 1 cup vegetable oil for frying
1 cup powdered sugar to sprinkle on top
In a mixing bowl, whisk the egg whites until they can hold stiff peaks. Set aside. In a separate bowl, mix the flour, baking powder, sugar, baking soda, salt, butter, and milk. Fold in the egg whites gently.
Heat the Aebelskiver pan on medium-high heat with vegetable oil in the middle circle. Once the pan is hot, use a brush to brush the oil into each circle. Fill the circles almost to the top with the batter and put a teaspoon of nutella in the center. Let cook for a few minutes and then use a fork to flip the Aebelskivers, and let cook for a couple more minutes.
Take out of the pan and sprinkle with powdered sugar.
