Flags and sports and medals, Oh my! The winter Olympics have arrived and what better way to celebrate than with a cupcake cake! I didn't have much time to make my cake, so it is not as clean as some of my cakes, but I still think it turned out pretty well. I filled the cupcakes with dark chocolate ganache and peanut butter frosting swirled together.

Peanut Butter Frosting
1/2 cup butter
1 cup peanut butter
2 teaspoons vanilla
1/4 cup milk
1 pound powdered sugar
In a mixing bowl with the whisk attachment, mix together the butter, peanut butter, and vanilla. Alternately add small amounts of milk and powdered sugar until it is all mixed in. If you want the frosting to be more stiff, then add more powdered sugar.
Dark Chocolate Ganache
12 oz. semi-sweet chocolate chips
1/3 cup milk
1 teaspoon vanilla
3-4 cups powdered sugar
Put a double boiler over medium-high heat. Mix together the chocolate chips, milk, and vanilla in the double boiler. Stir occasionally until all the chocolate is melted then mix in the powdered sugar 1 cup at a time.
